Dining in Ethiopia is characterized by the ritual of breaking “injera” and sharing food from a common plate, signifying the bonds of loyalty and friendship. The traditional way of eating is with fingers. “Injera” is placed on the plate with variety of dishes decoratively arranged around it. A small portion of “Injera” is torn off and wrapped around a mouthful of the selected dish.

For as long as he can remember, Pablo has been fascinated with cooking, with combining different flavors and creating unique taste experiences. In the sunny kitchen in Jamaica where he grew up, his mother created the best meals in the neighborhood. Intrigued with the process of turning ordinary foods into delectable creations, Pablo learned everything he could from his mother and credits her as being his inspiration.

As an adult, he traveled around the country in the capacity of principal consultant, constantly learning new techniques and tastes to add to his knowledge of food preparation. In every city where he stayed he hosted dinner parties to try out his new culinary creations, always adding to his repertoire and striving for the best cuisine from around the world. Finally, after years of catering and being a personal chef, he decided to act on numerous suggestions that he made his taste available to the public, he decided to partner with Abraham and make his globally inspired Caribbean fusion foods available to everyone.

Pablo holds a BA in Marketing and a BA in Management from Park University. He has previously worked at UMB Bank, DST, TIAA CREF, among other corporations.
